* Soppy Joe Biscuts *

These biscuit filled bowls are quick and easy to make. You could use the smaller biscuits for appetizers. This recipe does make allot so unless you have a large family you can freeze some for a later date. One biscuit is one serving so be sure to have fresh fruit, like grapes or sliced apples or green salad and vegetable, (corn is my favorite with this dish) to serve with these so that you feel satisfied with just one.

Sloppy Joe Biscuits

1 pound lean ground beef (90/10)
1/4 cup chopped onion
1/4 cup chopped green bell pepper
½ cup ketchup
1 tablespoon yellow mustard
1 teaspoon Worcestershire sauce
1/4 teaspoon salt
1/8 teaspoon pepper
2 cans (8 biscuits each) large refrigerated buttermilk biscuits
1 cup shredded Cheddar cheese

Heat oven to 375 degrees. In a 10 inch skillet cook ground beef, onion and green pepper over medium-high heat until beef in thoroughly cooked; drain. Stir in ketchup, mustard. Worcestershire sauce, salt and pepper. Cook until bubbly.

Using the bottom on a smooth glass or with your fingers, press down center of the biscuits to form a 4 to 5 inch cup. Place each cup on a cookie sheet. Fill each cup with ground beef mixture. Sprinkle with cheese. Bake at 375 degrees for 15 to 18 minutes.
