feel very guilty putting this cookie recipe on this site because there
is nothing healthy or nutritious about them. They are full of butter
and sugar, not to mention the fatty macadamia nuts; and taste every bit
like it. I made them today for a church social I was going to which was
a good thing because then I could take them and NOT bring them home.
This recipe makes 5 dozen 2 inch cookies, so it is a big recipe. You
could freeze the cookies or freeze the dough if that would help, if not
you may only want to make them for special occasions when you are
planning to splurge or when you know that you will not be bringing them
back home with you.
INGREDIENTS 1 ½ cup butter, softened to room temperature 1 ½ cup packed brown sugar 1 ½ cup white sugar 3 egg 1 Tablespoon vanilla 4 ½ cups all-purpose flour 1 ½ teaspoon baking soda 2 cups white chocolate chips 2 cups dried cranberries 1 ½ cup macadamia nuts chopped.
Preparation:
Preheat oven to 375 degrees. In a large bowl, cream together the
butter, brown sugar, white sugar until fluffy. Beat in the egg and the
vanilla. Combine the flour and baking soda and stir into the sugar
mixture. Do not over beat as this will cause the cookies to be tough.
Fold in white chocolate chips, cranberries and nuts. Drop by heaping
spoonfuls onto the cookie sheets. Bake for 10 – 12 minutes until
slightly brown on the edges. Allow cookies to cool for 3 minutes on the
cookie sheets before placing them on a cooling rack.
Serving Size 2 cookies
If you can hold yourself to one cookie then cut these amounts in half.
